Mackerel and trout salad recipe details
Ingredients
6 | fillets of mackerel, skins and pin bones removed |
6 | fillets of rainbow trout, skins and pin bones removed |
80 g | coarse sea salt |
100 g | golden caster sugar |
15 g | fresh ground white pepper |
1 bunch(es) | dill, large, chopped |
Instructions
Mix the salt, sugar, pepper and dill in a plastic bowl. Divide the mixture into two. Sprinkle a layer onto one of two baking dishes. Place the mackerel fillets cut side down onto one and add another layer of cure on top. Cover with clingfilm. Set aside.Do the same with the trout fillets and cover with clingfilm.
Place one tray on top of the other and place a chopping board on top with a few tin cans of something on top as weights. Place in the fridge overnight.
After 24 hours, pour off any excess juices and return to the fridge for a further 24 hours.
Remove the weights and board. Hold each fillet in turn over a bowl and remove the cure mixture with the back of a knife. Rinse briefly and slice at an angle with a sharp knife.
Serve alternate slices of each type of fish arranged on a plate with toast or a small salad of choice.
