Ingredients

2 cup(s) self-raising flour
1 cup(s) sugar
4 ounce(s) margarine
2 tsp ground ginger
2 tbsp golden syrup
1 medium egg
½ tsp bicarbonate of soda
1 cup(s) boiled milk

Instructions

Lightly beat the egg in a cup. Warm milk in a pan.

Combine all the ingredients, except the milk, in a large bowl and add the beaten egg.

Then add the hot milk and mix with a hand mixer to a pouring batter.

Pour into a 18cm cake tin or in a 20 x 25 cm roasting tin and cook in the oven about 45 minutes at gas 3 or 150°C until golden brown.

This will make approximately 16 portions. It is also nice to serve the sponge parkin with custard sauce.
