Quick Sponge Parkin recipe

|2 cup(s)||self-raising flour|
|2 tsp||ground ginger|
|2 tbsp||golden syrup|
|½ tsp||bicarbonate of soda|
|1 cup(s)||boiled milk|
Lightly beat the egg in a cup. Warm milk in a pan.
Combine all the ingredients, except the milk, in a large bowl and add the beaten egg.
Then add the hot milk and mix with a hand mixer to a pouring batter.
Pour into a 18cm cake tin or in a 20 x 25 cm roasting tin and cook in the oven about 45 minutes at gas 3 or 150°C until golden brown.
This will make approximately 16 portions. It is also nice to serve the sponge parkin with custard sauce.
