Quick lemon ice cream recipe details
Ingredients
1 large | lemon |
200 g | granulated sugar |
250 ml | full-fat milk |
250 ml | double cream |
Instructions
Remove the zest from the lemon using a vegetable peeler, or carefully with a sharp paring knife to minimise the amount of pith removed.Place the zest strips and sugar into a blender or food processor and process until finely ground and well combined.
Turn out into a bowl and mix well with the milk until the sugar has fully dissolved. Stir in the lemon juice.
Whisk the cream until just stiff and fold into the lemon mixture. Pour into a 1lb, 500g loaf tin lined with cling film and freeze covered with more cling film until firm, about 3 hours.
Alternatively freeze in ice cream maker according to manufacturers’ instructions. Spoon into a covered freezer-proof container and freeze for 2-3 hours until firm. ALlow to soften slightly before serving.
