Quiche with spinach and goat s cheese recipe details
Ingredients
For the shortcrust pastry: | |
160 g | flour |
3 tbsp | cold water |
100 g | butter, diced |
1 pinch(es) | salt |
For the topping: | |
1 tbsp | butter |
3 slice(s) | streaky bacon |
2 | onions |
1 clove(s) | garlic |
200 g | spinach, blanchhed and drained |
4 | sun-dried tomatoes in oil, drained and sliced |
3 | eggs |
150 g | sour cream |
100 g | goat’s cheese, crumbled |
3 tbsp | freshly grated Gruyère cheese, optional |
salt and pepper | |

Instructions
In a bowl, combine the flour and the salt. Make a well into the middle and pour in the cold water. Add the butter pieces and knead briefly until well combined. Wrap the pastry into foil and place into the fridge for an hour.Dice the bacon and the onions. Fry in a pan with butter until golden. Add the garlic, spinach and the tomatoes and cook stirring for a minute. Take the pan from the heat.
Whisk the eggs with sour cream and goat’s cheese. Season with salt, nutmeg and pepper. Stir in the the spinach mixture.
On a floured surface, roll out the pastry. Line a greased pie form with the pastry and divide the spinach mixture on top. Optional sprinkle with grated Gruyère, but the quiche tastes very well also without the cheese.
Bake in the preheated oven at 180°C, fan on, for 30 minutes.
Allow to cool for a while before serving. Cut into pie pieces and serve lukewarm with a glass of cool white wine.
