Pumpkin soup with coconut milk recipe details
Ingredients
1 kg | pumpkin, peeled, seeded, chopped into chunks |
3 tbsp | butter |
400 ml | coconut milk |
1 l | water |
1 | vegetable stock cube |
Instructions
Melt butter in a large pot or saucepan. Add pumpkin chunks, cover with water, add stock cube and stir. Cover with lid and cook over medium heat until pumpkin is soft. Stir occasionally so that pumpkin chunks fall apart to make the soup. Cook for about 45-60 minutes.When pumpkin is soft, remove from heat and stir in coconut milk. Reheat for about 2 minutes and serve.
