Ingredients
200 g | flour |
2 tbsp | brown sugar |
1 tbsp | baking powder |
300 ml | milk |
250 g | fresh or canned pumpkin |
2 medium | eggs, beaten |
2 tbsp | olive oil |
Instructions
Stir together the flour, brown sugar and baking powder.In another bowl combine the milk, pumpkin, egg and oil. Combine both mixtures and stir just until moistened.
Cook pancakes in a greased skillet until surfacesand edges are set. Turn once and cook until lightly brown.
