Ingredients

500 g stale white bread
100 g sugar
100 g soft butter
3  eggs
1 tsp lemon peel
2 tbsp cocoa powder
100 g currants
dried cherries, roughly chopped
50 g dried dates, pitted and chopped
60 g walnuts or almonds, toasted and roughly chopped
80 ml brandy
milk

Instructions

Soak the bread in milk for 30 minutes. Squeeze out and pluck the bread into a bowl. Add all the other ingredients and knead until well combined.

Fill the mixture into a buttered cake tin. Bake in the preheated oven at 160°C for 50-60 minutes.
