Potatoes Eileen recipe

- Potatoes
- Salt and pepper to taste
- Onion powder
Instructions:
Our friend Eileen made these for us regularly. Use Maine potatoes, of course, for the best effect. If you like more of a “bite” in your potatoes, try adding a sprinkle of red pepper.
Boil potatoes, whole with skin on. Drain and put in refrigerator to cool (overnight is fine). Cube potatoes when ready to cook. Fry in hot bacon fat (or bacon fat mixed with shortening; pure shortening leaves them bland). Season lightly with onion powder and salt and pepper to taste.
