Ingredients

4 medium	potatoes, cooked
1 tsp	vanilla extract
	peanut butter
50 g	sugar

Instructions

Mash potaoes, add vanilla and sugar and beat until soft dough is formed.

Divide dough into four parts. Roll between wax paper to form bars. Spread thin layer of peanut butter on each layer and roll up like a jelly roll. Refrigerate overnight.

To serve, cut into small pieces.
