- Ingredients
- 2 cups of sugar
- 1 cup of margarine
- 4 eggs – whites beaten separately
- 1 cup mashed potatoes
- 2 cups sifted flour
- 2 teaspoons baking powder
- 1/2 cup milk
This recipe was very special to our family. When our four children were young, each year we would pack up and go visit our dear friend in Lawrence, Michigan. She would bake this cake with chocolate chip cookies and serve it to us not only for dessert but anytime we wanted it, even at our breakfast table. It was always a big hit with us and our four children, but an extra treat when peaches were in season as she would slice them up and chill them and put them on top with whipping cream.
If there was some cake left when we left for home she always packed us up with a goodie bag with cookies, candies, and cake and we would have it when we arrived home late that night. Memories of visiting her on the farmstead were filled with laughter and love. We would go each year and she enjoyed our children as if they were her own. They loved her as if she were their grandmother and we as if she were our mother.
She now is gone but we still bake her cake and enjoy it more now as with each piece we recall our visits and special time we spent with her.…Lill Katzbeck
Cream sugar and margarine together then add egg yolks, beat, and add rest of ingredients. In a separate bowl beat egg whites till stiff then fold in egg whites to mixture.
Put in greased 9 x 13 inch glass baking dish. Bake at 350 degrees for 45 minutes. Allow to cool and serve plain or with fresh fruit and whipping cream. Absolutely delicious.
