Potato and vegetable tart recipe details
Ingredients
750 g | carrots |
750 g | waxy potatoes |
500 g | spinach |
300 ml | single cream |
6 | eggs |
salt and pepper | |
ground nutmeg | |
1 bunch(es) | chervil |
Instructions
Peel the carrots and the potatoes, then finely cut in slices.Preheat the oven to 180°C/ Gas Mark 2-3.
Bring salted water to the boil. Cook one vegetable (including the potatoes) at a time, the potatoes for 8 minutes, the carrots for 3 minutes and the spinach for approximately 10 seconds. Afterwards chill all vegetable3s with ice-cold water and drain in 3 separate sieves.
Whisk the single cream with the eggs. Season with salt, pepper and nutmeg. Grease a springform pan or casserole dish and divide the spinach on the bottom, layer the potatoes upon the spinach, then arrange the carrots on top. Pour the egg and cream mixture over the vegetables.
Transfer the pan to the preheated oven on the second rack from the bottom and bake for 60 minutes. Cover the tart after approximately 45 minutes of baking time.
Place the springform pan on a wire rack, allow to cool for the first 10 minutes. Remove the pan and transfer the tart on a platter.
Garnish with chervil and serve immediately.
