Meaty, hearty potato pancakes to start your day off right.

Ingredients
Serves: 4- 1 1/2 pounds potatoes
- 1 small onion, grated
- 5 ounces corned beef, flaked
- Salt and pepper, to taste
- 1 1/2 tablespoons flour
- 1 egg
- Vegetable oil, for frying
Preparation method
Prep: 20 mins | Cook: 15 mins1. Grate or shred the potatoes, then rinse and drain well. Combine in a bowl with onion, corned beef, and salt and pepper.
2. In a small dish, whisk the flour into the egg. Stir into the potato mixture.
3. Pour 2 tablespoons of oil into a large skillet and place over medium-high heat. Drop walnut-sized balls of the potato mixture into the hot oil and flatten to 3-inch circles; cook until browned on the bottom, then flip and brown the other sides. Repeat for all potato mixture.
