Pork stew details
INGREDIENTS:Serves 4
500g pork belly
5 garlic cloves, skinned
1cm galangal, sliced
2 red chilies, sliced
2 star anise
1 tsp Szechuan peppercorns
Seasoning:
2 tbsp dark soy sauce
4 tbsp light soy sauce
1 tbsp Shaoxing wine
3-4 tsp sugar
6 cups water, or enough to cover pork belly
Salt and sugar, to taste
1 tsp cornstarch mixed with 2 tbsp water
Method:
- Put all ingredients and seasoning, except salt, sugar and starchy water, into a stock pot. Bring to a boil
- Lower the heat and simmer contents for 2 hours until pork belly is tender.
- Remove pork belly onto a chopping board. Cut into thick pieces and arrange on a serving dish.
- Transfer small portion of the sauce into a pan. Bring to a boil. Season with salt and sugar, if required.
- Thicken sauce with starch water. Pour sauce over belly pieces and serve.
