INGREDIENTS:

Serves 4

500g pork belly

5 garlic cloves, skinned

1cm galangal, sliced

2 red chilies, sliced

2 star anise

1 tsp Szechuan peppercorns

Seasoning:

2 tbsp dark soy sauce

4 tbsp light soy sauce

1 tbsp Shaoxing wine

3-4 tsp sugar

6 cups water, or enough to cover pork belly

Salt and sugar, to taste

1 tsp cornstarch mixed with 2 tbsp water

Method:

  1. Put all ingredients and seasoning, except salt, sugar and starchy water, into a stock pot. Bring to a boil

  2. Lower the heat and simmer contents for 2 hours until pork belly is tender.

  3. Remove pork belly onto a chopping board. Cut into thick pieces and arrange on a serving dish.

  4. Transfer small portion of the sauce into a pan. Bring to a boil. Season with salt and sugar, if required.

  5. Thicken sauce with starch water. Pour sauce over belly pieces and serve.
