Ingredients

3 sprig(s) rosemary, chopped
1 ½ kg spare ribs, trimmed and cut into serving pieces
2 clove(s) garlic, chopped
3 tbsp whisky
2 tbsp tomato puree
8 tbsp ketchup
1 tbsp Worcestershire sauce
1 tbsp Tabasco sauce
1 tbsp brown sugar
salt and pepper

Instructions

In a large shallow dish, mix the ketchup with rosemary, whisky, tomato purée, Worcestershire sauce, Tabasco, sugar and garlic. Season with salt and pepper.

Put the spare ribs into the dish and coat them with the marinade. Place into the fridge and marinate for 6 hours.

Preheat a grill. Grill the spare ribs for 20 minutes or until deeply browned, turning and basting with the marinade frequently.
