Ingredients

1 kg pork roast
250 g mixed dried fruit, divided
150 ml water
150 ml honey
200 ml onion soup
60 g tomatoes, pureed
4 tbsp lemon juice


Instructions

Make 15 to 20 slits in the roast. Place some fruit in each slit.

In a bowl, combine water, honey, soup, pureed tomatoes, lemon juice and remaining fruit. Mix well.

Place roast in a roasting pan. Pour fruit mixture over the top.

Cover and bake at 150°C for about 3 hours. Let stand for 10 to 15 minutes before carving.
