Ingredients
For the marinade: | |
200 ml | dry white wine, Portuguese vinho verde |
2 tbsp | sherry vinegar |
4 clove(s) | garlic, finely chopped |
1 | clove |
4 | bay leaves |
2 tbsp | paprika powder |
For the stew: | |
750 g | lean pork shoulder, skin off, cut into bite-sized strips |
1 tbsp | olive oil |
225 g | onions, chopped |
salt and pepper | |
6 clove(s) | garlic, chopped |
Instructions
Mix all the ingredients for the marinade until smooth. In a bowl coat the meat with the marinade. Cover and marinate in the refrigerator for several hours, turning occasionally.In a saucepan heat the oil. Take the meat out of the marinade and pat dry. Fry in the oil until golden all around. Add the onions and the garlic and cook stirring for a few minutes. Season with salt and pepper. Add some tablespoons of the marinade, cover and cook over low heat for approximately 30 minutes or until the meat is tender.
Serve with fresh white bread or potato wedges.
