Ingredients

150 g flour
2 tsp baking powder
¼ tsp ground cardamom
5 tbsp butter, unsalted
170 g brown sugar
2 medium eggs
90 ml canola oil
1 ½ tsp vanilla extract
8  plums, halved, pitted

Instructions

In a bowl, combine the flour, baking powder, salt and ground cardamom.

In another bowl, cream the butter with the brown sugar. Add the eggs, one at a time, beating well after each addition. Beat in the oil and vanilla.

Reduce the speed of your mixer and combine both mixtures.

Line a cupcake baking tray with paper cups and fill batter into each paper cup, about 3/4 full or more, as they do not rise very much durign baking. Place sliced plums on top of the batter.

Preheat oven to 180°C and bake for about 20 minutes.
