Plum cupcakes recipe details
Ingredients
150 g | flour |
2 tsp | baking powder |
¼ tsp | ground cardamom |
5 tbsp | butter, unsalted |
170 g | brown sugar |
2 medium | eggs |
90 ml | canola oil |
1 ½ tsp | vanilla extract |
8 | plums, halved, pitted |
Instructions
In a bowl, combine the flour, baking powder, salt and ground cardamom.In another bowl, cream the butter with the brown sugar. Add the eggs, one at a time, beating well after each addition. Beat in the oil and vanilla.
Reduce the speed of your mixer and combine both mixtures.
Line a cupcake baking tray with paper cups and fill batter into each paper cup, about 3/4 full or more, as they do not rise very much durign baking. Place sliced plums on top of the batter.
Preheat oven to 180°C and bake for about 20 minutes.
