Ingredients
700 g | plums, quartered and stones removed |
250 g | curd cheese |
30 g | icing sugar |
2 | eggs, separated |
100 ml | orange juice |
100 g | sugar |
1 dash(es) | cinnamon |
50 g | butter |
80 g | lady’s fingers, roughly chopped |
1 | lemon, grated peel |
2 tbsp | plum schnapps |
icing sugar, to dust |
Instructions
Stir together the cinnamon and 20g of the sugar. Sprinkle a buttered casserole dish with the cinnamon and sugar mixture.
In a saucepan, bring the orange juice and 30g of the sugar to a boil. Reduce the heat, stir in the plums, cover and simmer for 10 minutes.
Preheat the oven to 200°C.
In a bowl, cream together the butter and the icing sugar. Stir in the egg yolks, curd cheese and the lemon peel. Whisk the egg whites with the remaining sugar until stiff and fold in.
Transfer the plums with the sauce into the casserole dish. Layer the lady’s fingers onto the plums and drizzle over the schnapps. Spread with the curd cheese mixture. Bake for 25-30 minutes.
Serve dusted with icing sugar.
