Ingredients
300 g | plain flour |
2 large | eggs |
150 g | unsalted butter, softened |
3 ½ tsp | baking powder |
1 tsp | salt |
1 tsp | vanilla extract |
300 ml | milk |
375 g | caster sugar |
Instructions
An American recipe used to create a great many wedding and similar cakes when appropriately iced and decorated. The cake may also be topped with a drizzle topping or a light frosting of your choice. It may also be divided and used to make 3 x 8-inch (20 cm) layers, 2 x 9-inch (22 cm) layers or as a whole to make a single 12-inch cake or a deep 9-inch cake.Preheat oven to Gas Mark 4, 180ºC, 350ºF. Grease the required tin.
Place all the ingredients into a bowl and beat together with a hand mixer at medium speed for about 4 minutes.
Pour into tin and bake for 25-30 minutes (for a moderately deep 9-inch tin). A shallower cake will require about 5 minutes less and a deeper one 5-10 minutes more. Test with a skewer inserted into the centre of the cake if done.
Allow to cool in tin for about 10 minutes. Turn out onto a wire rack to cool completely.
