Pistachio chicken with pomegranate sauce recipe details
Ingredients
6 medium | eggs |
50 ml | milk |
4 medium | chicken breast fillets |
90 g | flour |
130 g | pistachio nuts, finely chopped |
butter for frying | |
For the sauce: | |
2 tbsp | shallots, minced |
120 ml | dry white wine |
120 ml | chicken stock |
120 ml | double cream |
50 g | butter |
1 ½ tbsp | pomegranate juice |
salt and pepper |
Instructions
Preheat the oven to 180°C.In a bowl, mix together the eggs and the milk. Dip the lightly salted chicken breasts into the flour, then into the egg mixture and then into the chopped pistachio nuts.
In a pan, fry the chicken breasts in butter over medium heat until golden brown. Transfer the chicken breasts into a casserole and bake for 25 -30 minutes.
After 20 minutes, fry the shallots in butter until soft. Stir in the double cream, white wine, chicken stock and pomegranate juice. Cook for 5 minutes over low heat and season to taste with salt and pepper.
Place the chicken breasts on serving plates and pour over the sauce.
