Ingredients

200 g digestive biscuits
100 g butter
½ tsp vanilla essence
400 g soft cheese
150 g natural yogurt
1 packet(s) lemon jelly
100 ml cold water
75 g caster sugar

Instructions

Put the biscuits in a freezer bag, close bag and crush biscuits until they resemble bread crumbs.

Melt the butter and mix with vanilla essence and the crushed biscuits. Press in a springform tin and set aside.

Combine the jelly with the water and cook in the microwave for a minute to melt the jelly. Be careful not to bring the mixture to a boil. Add the sugar and stir well so the sugar dissolves.

In a seperate bowl mix the soft cheese with the yogurt until smooth. Add the jelly sugar mix and combine everything until well incorporated and smooth. Either use an electric mixer or a hand whisk.

Fill mixture into the tin and put in the fridge for at least two hours to allow setting.

Variations:Add well drained peach slices or strawberries or use orange jelly with tinned mandarin slices.
