Peppered mackerel and potato bake recipe details
Ingredients
750 g | potatoes, Anna, Charlotte etc |
2 tbsp | olive oil |
1 large | onion, sliced |
2 large | smoked peppered mackerel fillets, total weight 250-275g approx |
300 ml | double cream |
Instructions
Preheat the oven to Gas Mark 5, 190°C, 375°F.Boil the potatoes in their skins until becoming tender. Drain, allow to cool until comfortable to handle and cut into thin slices.
Heat the oil in a large frying pan and fry off the onion until soft and golden. Toss the potatoes and onion together for a few seconds and then season.
Place about half the potato mixture into an ovenproof 1.4-1.5 litre dish.
Remove the skin and any bones from the mackerel and flake it over the potatoes. Top with the remaining potato mixture and pour the cream over the top.
Cover with foil and bake for about 30 minutes. Remove the foil and bake for an extra 2025 minutes until golden brown on top.
Serve immediately.
