Ingredients
Serves: 4- 2 cups flour
- 2 tablespoons sugar
- 4 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 cups milk
- 2 eggs, lightly beaten
- 1/4 cup canola oil
- 1 (15 ounce) can peach halves, drained very well and chopped finely
- Sauce:
- 1 cup corn syrup
- 1/2 cup sugar
- 1/3 cup butter, cut into chunks
- 1 egg
- 2 teaspoons vanilla extract
Preparation method
Prep: 15 mins | Cook: 15 mins1. Whisk flour together with sugar, baking powder, cinnamon, and salt in a bowl. In a separate mixing bowl, beat milk with eggs and canola oil.
2. Pour milk mixture into the flour mixture and stir briefly to combine. Don’t overmix or the pancakes will turn out tough. Add peaches and gently stir to incorporate.
3. Heat a griddle pan and coat with nonstick cooking spray. Add peach batter to the pan in 1/4 cup measures. When the pancakes have bubbles on the top of the batter, flip and brown the other side. Continue cooking in batches.
4. Stir corn syrup, sugar, butter, and egg together in a saucepan. Set over medium heat and cook, stirring, until sauce thickens. Add vanilla.
5. Serve pancakes with sauce spooned on top.
