Pastry rolls stuffed with vegetables recipe details
Ingredients
1 pack(s) | puff pastry, ready made, from the chiller cabinet |
100 g | carrots, grated |
100 g | celeriac, grated |
100 g | leek, sliced |
100 g | spring onions, sliced |
100 g | mushrooms, sliced |
1 bunch(es) | basil, chopped |
1 clove(s) | garlic, chopped |
1 medium | egg yolk |
salt and pepper | |
250 ml | vegetable stock |
250 g | single cream |
1 bunch(es) | mixed herbs, e.g. parsley, chervil, chives, chopped |
Instructions
In a bowl mix the vegetables with garlic and basil. Season with salt and pepper.Roll out the pastry and spread with the vegetable mixture. Roll up the pastry. Transfer the pastry roll onto a lined baking tray. Brush with the whisked egg yolk. Bake in the preheated oven at 180°C for 20-30 minutes until golden and crispy.
In a saucepan heat the stock. Stir in the cream. Boil down a bit. Stir in the herbs and froth up the sauce with a hand blender. Season to taste with salt and pepper.
Spoon ever a little of the sauce onto the plates. Carve the pastry roll into neat slices and arrange them on the sauce. Serve immediately.
