Heat milk over medium heat and add vanilla bean.
In a bowl beat the egg yolks and sugar at high speed. Gradually add sifted flour and cornstarch. Beat until well combined and smooth.
Add egg mixture to milk and vanilla bean and heat again over a bowl of simmering water or in a double boiler, stirring until cream thickens. Remove vanilla bean. When thickened, leave to cool.
Use this cream to fill your favourite pastries or cakes.
