Passion fruit ice cream recipe details
Ingredients
125 g | caster sugar |
2 large | egg yolks |
250 ml | double cream |
125 ml | passion fruit pulp, about 6 medium fruits, use more rather than less if necessary |
Instructions
Makes about 0.5 litre.Whisk yolks and sugar until light and fluffy.
Gently heat the cream in a small heavy saucepan over a medium heat until just reaching boiling point. Remove from heat and pour as a stream into yolk mixture, whisking thoroughly. Return to pan and cook gently, stirring constantly, until sufficiently thick to coat the back of a spoon.
Pass through a fine mesh sieve into a clean bowl and allow to cool completely. Stir in the passion fruit pulp and mix well. Cover the bowl and chill in refrigerator until very cold.
Freeze in ice cream maker according to manufacturers’ instructions. Transfer to an airtight freezer-proof container and place in freezer for 2-3 hours to firm.
Serve slightly softened, in small scoops, in association with other speciality and heavily flavoured ice creams, a maximum of 3 or 4 per serving according to size of scoop.
