Parsnip soup recipe details
Ingredients
2 | onions |
800 g | parsnips |
2 | apples |
3 tbsp | oil |
2 tbsp | curry powder, hot |
50 g | flour |
1.4 l | chicken stock |
200 ml | natural yogurt |
1 | carrot, sweet |
salt and pepper |
Instructions
Chop the onions, parsnips, carrot and apples.Heat the oil, add the curry powder, onions, parsnips, carrot and apples and cook for 5 minutes. Reduce the heat, stir in the flour and gradually add the stock, stirring all the time. Bring to the boil, season to taste and simmer gently for 20 to 25 minutes.
Blend the soup in a liquidiser until smooth. Return the soup to the pot and reheat. To serve the soup, pour into individual dishes and garnish each serving with the yogurt.
