Oven baked fish with green asparagus and tomatoes recipe details
Ingredients
450 g | salmon fillets or fish of your choice |
1 tbsp | olive oil |
1 tbsp | fresh lemon juice |
some | salt |
some | freshly ground black pepper |
6 | shallots, diced |
200 g | green asparagus, cut into 3cm pieces |
3 clove(s) | garlic, finely chopped |
250 g | cherry tomatoes, halved |
½ cup(s) | fresh basil, pulled to pieces |
Instructions
Cut salmon in approximately 8×5 cm pieces and place in a lightly oiled casserole dish.Whisk the olive oil, lemons juice, salt and pepper and pour over the salmon.
Sauté onions and asparagus for about 3 minutes. Add garlic and sauté for a further 2 minutes.
Add tomatoes and basil and mix well. Season to taste.
Place the tomato-asparagus mix onto the salmon and bake covered in a fan-forced oven, 160°-170º C, for about 20-30 minutes or until fish is just cooked through.
Tip: Can be prepared a couple of hours in advance and stored in the fridge. But the tomato-asparagus mix has to be cooled down before placing it onto the salmon.
