Oreo cheesecake recipe details
|4 tbsp||butter, melted|
|900 g||cream cheese|
|3 medium||eggs, yolks only|
|90 ml||whipping cream|
|2 tsp||vanilla extract|
|500 ml||sour cream|
Combine oreos and butter in a blender and process until smooth. Press into springfoam pan.
Combine cream cheese and 250 g sugar in a bowl and beat until well combined, 3 minutes. Add flour, eggs and yolks, mixing until smooth. Beat in cream and 1 teaspoon vanilla. Pour half of the mixture into crust. Sprinkle with crushed oreos oreos and pour in remaining filling.
Preheat oven to 200°C.
Bake for 15 minutes. Reduce heat to 120°C and bake for further 50 minutes. Remove from oven.
Meanwhile combine sour cream, remaining sugar and remaining vanilla in a bowl. Mix well and spread over cake. Place back into the oven and bake for further 5-7 minutes.
Remove from oven and leave to cool. Cover and refrigerate overnight before serving.
