Ingredients
- 1/2 pound bacon, diced
- 1/2 cup chopped onion
- 2 (15 ounce) cans hominy, drained
- 8 eggs, beaten
- 1/4 teaspoon black pepper
Preparation method
Cook bacon in a skillet over medium heat until almost crisp; drain on paper towels, then return to the skillet with the onion and cook for another 4 minutes to soften the onion.
Add remaining ingredients. Cook until eggs are set.
Plate and serve.

Thanks for the recipe. I usually use hominy to make tortillas, but a simple recipe as this can work for me too. I make tortillas using hominy the following way:
I soak and dry hominy overnight, then cook until tender. Afterwards I use a grinder to create a dough-like texture onto which I add water and salt (mix well). I then add a pinch of salt to form a pliable dough, then I divide it into small sized balls. Lastly, I press onto the balls to flatten them, forming a classic tortilla.
Yes, I think this is the most “famous” way to make use of hominy.
