Serves: 4- 1/2 pound bacon, diced
- 1/2 cup chopped onion
- 2 (15 ounce) cans hominy, drained
- 8 eggs, beaten
- 1/4 teaspoon black pepper

Prep: 5 mins | Cook: 15 mins1. Cook bacon in a skillet over medium heat until almost crisp; drain on paper towels, then return to the skillet with the onion and cook for another 4 minutes to soften the onion.
