Nut and chocolate muffins recipe details
Ingredients
200 g | soft butter |
250 g | sugar |
6 | eggs, separated |
100 g | almonds, half chopped, half ground |
100 g | hazelnuts, half chopped, half ground |
50 g | walnuts, finely chopped |
1 tsp | baking powder |
1 tsp | cinnamon |
1 tsp | grated lemon peel |
200 g | dark chocolate, grated |
125 g | flour |
icing sugar | |
cocoa powder |
Instructions
In a bowl, cream together the butter, sugar and the egg yolks. Stir in the cinnamon, lemon zest, nuts, flour and the baking powder. Whisk the egg whites until stiff and fold the beaten egg white in the batter. Finally fold in the chocolate.Preheat the oven to 180°C. Pour the batter into buttered muffin cups and bake for 20-25 minutes. Allow to cool.
Serve dusted with icing sugar and cocoa powder.
