Northumberland felton spice loaf recipe details
Ingredients
100 g | self-raising flour |
100 g | sugar |
100 g | soft butter |
2 | eggs |
150 g | currants |
50 g | mixed peel, finely chopped |
milk | |
50 g | ground almonds |
½ tsp | ground mixed spice |
Instructions
In a bowl, whisk the butter and the sugar until creamy. Whisk in the eggs, one at a time. Fold in the sieved flour and the almonds. Add milk until you get a soft dropping batter. Stir in the currants, the mixed peel and the spices.Preheat the oven to 200°C. Pour the batter into a buttered shallow casserole dish and flatten. Bake for 15 minutes, then reduce the heat to 150°C and bake for 25 more minutes.
