Ingredients

100 g self-raising flour
100 g sugar
100 g soft butter
2  eggs
150 g currants
50 g mixed peel, finely chopped
milk
50 g ground almonds
½ tsp ground mixed spice

Instructions

In a bowl, whisk the butter and the sugar until creamy. Whisk in the eggs, one at a time. Fold in the sieved flour and the almonds. Add milk until you get a soft dropping batter. Stir in the currants, the mixed peel and the spices.

Preheat the oven to 200°C. Pour the batter into a buttered shallow casserole dish and flatten. Bake for 15 minutes, then reduce the heat to 150°C and bake for 25 more minutes.
