Northamptonshire cheese cake recipe details
Ingredients
600 ml | sour milk |
1 tsp | grated lemon peel |
shortcrust pastry, to line 4 small cake tins | |
3 tbsp | soft butter |
3 tbsp | currants |
1 | egg |
2 tbsp | sugar |
1 pinch(es) | freshly grated nutmeg |
almond extract, 2 drops |
Instructions
In a saucepan, bring the sour milk to a boil. Cook until the milk separates into whey and curd. Strain through a sieve, lined with cheesecloth, and press well. Discard the whey and allow the curd to cool.In a saucepan, whisk the butter with the sugar and the egg and cook stirring over low heat until thickened. Don’t allow to boil! Set aside and allow to cool down, stirring frequently. Add the curd, the currants, lemon peel, nutmeg and almond extract and stir until well combined.
Preheat the oven to 200°C. Line small cake tins with shortcrust pastry. Pour in the mixture and bake for 10-15 minutes. Serve warm or cold.
