Norfolk apple cake recipe details
Ingredients
400 g | cooking apples, finely diced |
125 g | mixed fruit |
250 g | SR flour |
125 g | brown sugar |
125 g | butter, salted |
1 large | egg(s) |
1 tsp | cinnamon |
1 tsp | mixed spices |
Instructions
Line the bottom of a 8″/20 cm cake tin.Rub butter and flour together. Add egg, sugar, cinnamon and mixed spice. As soon as mixture is smooth, stir in mixed fruit and apples.
Fill mixture into cake tin and bake for around 35 mins at 180˚C/fan 160˚C. Skewer probe might be misleading due to apples, but cake should feel sufficiently firm to the touch when pressed very lightly in the middle.
Cool in the tin.
Extra tip: Cake can also be served warm, as a dessert, with cream or Cream of Cornish ice cream.
