- Ingredients
- 2 cups All Branbran cereal
- 2 cups boiling water
- 1 cup plus 3 Tablespoons margarine
- 1-1/2 cups sugar
- 4 eggs
- 1 quart buttermilk
- 4 cups Bran-Buds
- 6 cups flour
- 5 teaspoons baking soda
- 2 teaspoons salt
Instructions:
How’s that for alliteration? We make up a large mixing bowl of muffin batter and use it, as needed, for more than a month. It’s good and it’s good for you.
Pour boiling water over the All Branand set aside. In a very large mixing bowl, cream margarine with sugar. Add eggs, one at a time. Blend in buttermilk. Add the All Bran/water mix. Add the Bran Buds.
Sift together the flour, baking soda, and salt. Add to the mixture. Combine everything. Turn into a large container, cover tightly, and store in refrigerator. Use as needed.
When making muffins, do not stir. Merely spoon into well-greased muffin pans just before baking. Set oven at 375 degrees. Bake for 16 minutes or until tops are firm.
