Ingredients
For the Crust: | |
1 medium | egg |
2 tsp | baking powder |
115 g | butter |
1 pinch(es) | salt |
240 ml | milk |
200 g | flour |
For the Filling: | |
3 large | eggs |
3 tbsp | butter |
1 tsp | vanilla essence |
2 tsp | almond essence |
1 tsp | powdered cinnamon |
2 tbsp | flour |
tbsp | corn flour |
Instructions
Making the Crust:Cream butter and sugar. Beat egg and add to creamed sugar mixture. Sift flour baking powder and salt. Add to the creamed sugar and eggs to make a soft dough. Divide into two and press thinly into two pie/flan dishes. Prick well and bake at 180°C for 15 minutes until just turning golden brown.
Filling:
Bring milk and butter to a boil. Mix together flour, corn flour, sugar and salt, add eggs one at a time beating well to ensure no lumps. Pour boiling milk into the flour mixture stirring well to ensure no lumps. Return to the stove and allow to boil until just forming craters. Mixture is not very thick. Stir all the time to make sure no lumps form. Remove from heat and add the essences. Pour into the bake pie cases and sprinkle thickly with cinnamon. Allow to cool before serving.
