Ingredients
Serves: 6- 1/4 cup paprika
- 3 tablespoons brown sugar
- 2 tablespoons chili powder
- 1 tablespoon garlic powder
- 1 tablespoon white pepper
- 1 tablespoon celery salt
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1 tablespoon pepper
- 2 teaspoons cayenne pepper
- 1 teaspoon ground mustard
- 1 (2 to 3 pound) beef sirloin tip roast
- 2 cups soaked hickory wood chips
- 2 tablespoons canola oil
Preparation method
Prep: 15 mins | Cook: 1 hour | Extra time: 10 mins, resting1. In a small bowl, combine paprika, sugar, chili powder, garlic powder, white pepper, celery salt, cumin, oregano, pepper, cayenne pepper, and ground mustard. Stir well, then pat over the roast.
2. Cover with plastic wrap and refrigerate for 8 hours. Then remove from fridge and allow to come to room temperature for 1 hour.
3. Preheat grill to medium-low heat, and set it up for indirect grilling. Place the woodchips in the grill’s smoke box.
4. Drizzle oil over the beef roast and set on the grill. Close the lid and grill for 1 to 1 1/2 hours. For medium doneness, grill until beef reaches 160 degrees internally.
5. Let the meat rest for 10 minutes after it reaches temperature, then slice and serve.
