Mediterranean vegetable sauce recipe details
Ingredients
2 | red bell peppers, diced |
2 | onions, chopped |
4 | tomatoes, peeled and diced |
1 clove(s) | garlic, chopped |
1 | courgette, diced |
1 tbsp | dried Italian herbs |
1 tbsp | tomato puree |
1 tbsp | oil |
½ l | vegetable stock |
salt and freshly ground black pepper |
Instructions
In a saucepan, heat the oil. Add the vegetables and herbs and cook stirring for 5 minutes. Stir in the tomato purée and cook for another minute. Pour in the stock, bring to a boil and simmer for approximately 15 minutes.Season to taste with salt and pepper. Serve with pasta, together with Parmesan cheese.
