Meatball stew recipe details
Ingredients
500 g | minced meat: beef, turkey, lamb etc |
2 medium | onion, chopped |
1 medium | egg |
100 g | rice, cooked |
1 tsp | dried oregano |
2 tbsp | butter |
500 ml | red wine |
4 medium | carrots, peeled, sliced |
4 medium | potatoes, peeled, sliced |
1 large can(s) | tomatoes with juice |
salt and pepper, to taste |
Instructions
Comine one chopped onion, egg, rice, salt, pepper and dried oregano in a blender and process for 10 seconds. Add uncooked minced meat and process until smooth.Shape into 20-24 meatballs.
Heat oil in a large saucepan. Add meatballs in batches and brown. When done, set aside. Discard excess fat and add the second onion and cook, stirring occasionally, for several minutes.
Add 120ml of the wine, bring to a boil and stir to dissolve browned bits. Add remaining wine, the vegetables, meatballs and bay leaf. Cover and reduce heat to low. Cook until vegetables are tender, 20-30 minutes.
Remove bay leaf and ladle into individual bowls to serve.
