Ingredients
For the marinade: | |
120 ml | olive oil |
120 ml | white wine vinegar |
3 tbsp | fresh parsley, chopped |
1 tsp | granulated sugar |
3 tbsp | green onion, minced |
¼ tsp | dried basil |
½ tsp | salt |
½ tsp | black pepper |
2 | red bell peppers, finely diced |
For the cheese: | |
230 g | Cheddar cheese |
230 g | Parmesan cheese |
fresh parsley sprigs, for garnish |
Instructions
Combine all the ingredients for the marinade and mix well. For a smoother consistency process in blender or food processor.Cut the cheeses into small chunks.
Arrange the cheese slices in a shallow baking dish. Pour the prepared marinade over the cheese slices, cover and leave to marinate in fridge for at least 8 hours.
To serve transfer cheese slices to a serving platter, reserving the marinade. Spoon marinade over the cheese slices and garnish with parsley.
Serve with assorted crackers.
