Ingredients

For the marinade:
120 ml olive oil
120 ml white wine vinegar
3 tbsp fresh parsley, chopped
1 tsp granulated sugar
3 tbsp green onion, minced
¼ tsp dried basil
½ tsp salt
½ tsp black pepper
2  red bell peppers, finely diced
For the cheese:
230 g Cheddar cheese
230 g Parmesan cheese
fresh parsley sprigs, for garnish

Instructions

Combine all the ingredients for the marinade and mix well. For a smoother consistency process in blender or food processor.

Cut the cheeses into small chunks.

Arrange the cheese slices in a shallow baking dish. Pour the prepared marinade over the cheese slices, cover and leave to marinate in fridge for at least 8 hours.

To serve transfer cheese slices to a serving platter, reserving the marinade. Spoon marinade over the cheese slices and garnish with parsley.

Serve with assorted crackers.
