Lindsay's english lemon curd recipe details
- Ingredients:
- 1 cup sugar
- 2 large hen’s eggs
- 2 egg yolks
- lemon zest from 1 lemon
- 1/2 cup fresh lemon juice
- 1/2 stick butter
Whisk sugar, eggs, and yolks in double boiler; blend in zest and lemon juice. Cook over low heat for 10 minutes with a lot of stirring (do not heat over 150 degrees). Remove from pan and stir in butter. Pour through strainer into bowl, cover surface with plastic, and chill for 4 hours.
Serving size: 1 teaspoon.
