Light potato and cucumber salad recipe details
Ingredients
800 g | potatoes |
salt and pepper | |
1 | lemon, juiced and zested |
100 ml | vegetable stock |
2 | cucumbers, peeled and sliced |
1 bunch(es) | cilantro, chopped |
300 g | yoghurt |
1 tbsp | chives, chopped |
2 tsp | parsley, chopped |
Instructions
Cook the potatoes in salted water until done. Drain, peel and allow to cool. Slice the potatoes and sprinkle with salt and pepper.In a bowl, mix together 4 tablespoons of lemon juice, 1 teaspoon of the lemon zest and the vegetable stock. Pour the sauce over the potatoes. Add the cucumber and mix well.
Stir in the yoghurt, cilantro, chives and parsley. Season to taste with salt and pepper.
Allow to steep for 30 minutes, before serving.
