Ingredients

1 tbsp	butter
2 tbsp	lemon juice
120 ml	chicken broth
120 ml	double cream
2 tsp	fresh thyme leaves, chopped

Instructions

Melt butter in a saucepan over low heat. Pour in the lemon juice and simmer, uncovered, for 30 seconds. Combine stock and cream and add to the pan. Reduce heat and simmer, stirring often, for 4 minutes or until the sauce reduces and thickens slightly. Season with salt and pepper. Add the thyme and stir.
