Leek and stilton soup recipe details
Ingredients
8 stalks | leek, trimmed, chopped |
2 stick(s) | celery, chopped |
50 g | butter |
1 tbsp | olive oil |
1 large | baking potato, peeled, diced |
1 ½ l | vegetable broth |
150 ml | single cream |
230 g | Stilton cheese, crumbled |
salt and pepper, to taste |
Instructions
Sauté the leek and celery in the butter and olive oil until softened, about 5 minutes. Add the diced potato and vegetable broth. Bring to a gentle simmer. Cover and cook for 30 minutes.Remove from heat and cool a little. In batches, process in a blender, together with the single cream and cheese.
Pour back into a large pan and heat through. Season with salt and pepper, if needed.
