Khatte chicken recipe details
Ingredients1. Chicken breasts (12)
2. yogurt (1c about 240gms)
3. white butter (4tbsp or 60 gms)
4. salt (to taste)
5. saffron (a pinch dissolve in 1tbsp of milk)
6. onions, cut in rings (2/3c)
7. lemon juice (2tbsp)
8. chopped green chilies (4)
9. ginger paste (4tsp)
10. garlic paste (4tsp)
11. capsicum, cut into rings (100gms)
12. cumin seeds (1tsp)
13. black pepper powder (1tsp)
14. almond paste (3tbsp)
Method of preparation
1. First heat the oven to 300 degrees F. Take yogurt, hang it in muslin cloth until it gets reduced to half. Take chicken breasts and remove the bones from it.
2. Take a bowl, mix yogurt, garlic paste, ginger paste, almond paste, green chilies, lemon juice, black pepper, cumin and salt in it. Then marinade the chicken in this mixture for about ½ an hour.
3. Take an oven proof dish and grease it. Then place the chicken pieces in dish and place the capsicum and onion rings over the chicken pieces and then pour the rest of the marinade over it. Spread the rest of butter on the top.
4. Place the dish in oven and cook it for about 20 minutes at 300 degrees F. Take out the dish from oven and sprinkle the dissolved saffron over it and place the dish again in oven and keep it to simmer for about 10 minutes. When it gets ready then serve it hot with bread or roti, chutney and raita.
