Ingredients
1 medium | courgette, diced |
1 | yellow bell pepper, diced |
½ | aubergine, diced |
1 can(s) | white beans |
1 | red onion, diced |
2 | tomatoes, diced |
½ bunch(es) | oregano, chopped |
salt and freshly ground black pepper | |
30 g | freshly grated Parmesan cheese |
1 tbsp | capers |
3 tbsp | olive oil |
800 ml | vegetable stock |
1 can(s) | pureed tomatoes, (410g) |
sugar |
Instructions
In a large saucepan, heat 2 tablespoons of oil. Sauté the onions, courgettes, aubergines and bell peppers until lucent. Remove from the saucepan.Heat 1 tablespoon of oil and cook stirring the fresh tomatoes for a minute. Add the stock and the puréed tomatoes. Add the vegetables, the oregano and the beans. Bring to a boil and cook for 5 minutes. Season to taste with salt, pepper and sugar.
Serve sprinkled with capers and Parmesan cheese.
