Ingredients

4 large ripe peaches, halved and stoned
4  boudoir biscuits or ladyfingers
2 tbsp blanched almonds . chopped
1 tsp lemon zest
½ tsp almond extract
60 ml white wine
60 g brown sugar

Instructions

Preheat the oven to Gas Mark 4, 180°C, 350°F.

Place 6 of the peach halves on a lightly greased casserole dish.

Place remaining peach halves, boudoir biscuits, zest and flavouring into a blender and pulse a few times until well blended but while retaining some texture. Divide the mixture between the peach halves, concentrating on the cavity. Drizzle with a little wine and sprinkle with brown sugar.

Bake for 15 minutes and serve immediately.
