Ingredients
4 large | ripe peaches, halved and stoned |
4 | boudoir biscuits or ladyfingers |
2 tbsp | blanched almonds . chopped |
1 tsp | lemon zest |
½ tsp | almond extract |
60 ml | white wine |
60 g | brown sugar |
Instructions
Preheat the oven to Gas Mark 4, 180°C, 350°F.Place 6 of the peach halves on a lightly greased casserole dish.
Place remaining peach halves, boudoir biscuits, zest and flavouring into a blender and pulse a few times until well blended but while retaining some texture. Divide the mixture between the peach halves, concentrating on the cavity. Drizzle with a little wine and sprinkle with brown sugar.
Bake for 15 minutes and serve immediately.
