Indian Fried Mashed Potatoes in Besan Flour recipe

Ingredients
600 g | potatoes |
1 | onion, chopped |
2 clove(s) | garlic, grated |
1 inch(es) | ginger, grated |
½ tsp | ground coriander |
½ tsp | ground cumin |
½ tsp | chili flakes |
½ bunch(es) | parsley |
salt | |
200 g | chickpea flour (Besan flour) |
oil, for frying |
Instructions
Boil the potatoes until soft, then drain and mash them. Set aside.
Heat some oil in a wide pan and sauté onion, garlic and ginger. Add the seasoning and then the mashed potatoes. Stir-fry for 3-5 minutes. Set aside and allow to cool a bit.
Mix the Besan flour with as much water as needed to get a batter. Roll the potato mixture into golf ball sized balls and turn the balls in the batter.
Fry in hot oil until brown all around. Serve with curry or with yoghurt raita.
