Ice cream base recipe details
Ingredients
650 ml | single cream |
80 ml | double cream |
125 g | caster sugar |
1 tsp | vanilla extract, may be omitted when adding fruit purée |
1 pinch(es) | salt |
Instructions
Combine all ingredients in a bowl and whisk together. Chill in refrigerator until quite cold and then pour into bowl of ice cream maker. Freeze according to manufacturers’ instructions.Add required flavouring in the form of fruit purée (based on about 400g of fresh soft fruit), grated chocolate etc, as required, or serve in basic form as vanilla flavour. Stir the chosen ‘filling’ into the basic mix and place in freezer for about 30 minutes to harden slightly or serve immediately.
About this recipe: in the form in which this was given, it was intended for small-volume commercial use and required a total exceeding 2 litres of cream. It is unlikely that anyone requiring to make domestic quantities would use a recipe on such a scale.
