Ingredients
1 kg | cherries, drained |
1 | grated lemon zest |
60 g | butter, melted |
400 g | peaches, sliced, drained |
100 g | sugar |
450 g | pineapple chunks, drained |
1 tsp | curry powder |
60 ml | rum |
60 ml | crystallized ginger, minced |
Instructions
In a buttered, large glass baking dish arrange cherries, peaches, pineapple chunks, orange sections and ginger. Sprinkle with grated lemon zest.
Combine melted butter, brown sugar and curry powder. Stir until mixture has formed a paste and then distribute over the fruit. Pour rum over all.
Bake at150°C for 45 minutes
Serve hot as an accompaniment to meat or poultry, or chilled as a dessert.
