Hot cherry fruit compote recipe details
Ingredients
1 kg | cherries, drained |
1 | grated lemon zest |
60 g | butter, melted |
400 g | peaches, sliced, drained |
100 g | sugar |
450 g | pineapple chunks, drained |
1 tsp | curry powder |
60 ml | rum |
60 ml | crystallized ginger, minced |
Instructions
In a buttered, large glass baking dish arrange cherries, peaches, pineapple chunks, orange sections and ginger. Sprinkle with grated lemon zest.Combine melted butter, brown sugar and curry powder. Stir until mixture has formed a paste and then distribute over the fruit. Pour rum over all.
Bake at150°C for 45 minutes
Serve hot as an accompaniment to meat or poultry, or chilled as a dessert.
